Ginger beef is a popular Chinese foo dish in Western Canada, thought to have originated in Calgary, Alberta. It can be ordered at most Chinese restaurants in the region. The actual end result can depend on where you purchase it, but generally it consists of deep fried strips of beef coated in a dark sweet sauce that is reminiscent of other Asian sauces based on vinegar and sugar (i.e., the Japanese Teriyaki). It also contains flavours of ginger, garlic and hot peppers, and is commonly served with a small amount of julienned carrots and onions in the sauce. Ginger beef has a number of similarities with General Tso's Chicken, in terms of cooking technique, texture and flavour, although obviously differing in the meat used.
