Manchego cheese is a sheep's milk cheese mae in the La Mancha region of Spain, and in addition is produced in Mexico. Spanish Manchego is aged for 3 months or longer, and is a semi-firm cheese with a rich golden colour and small holes. It ranges from mild to sharp, depending on how long it is aged. Less well known, Mexican manchego is produced via varying production techniques, and is prominent in Mexican cooking as a melting cheese.
