Salt pork is a pork prouct made from pork bellies, cured with salt as a preservative and flavoring. It is similar to bacon but considerably fattier and saltier. It was long used as a shipboard ration and finds some use in traditional American cuisine, particularly Boston baked beans. It is commonly used to add flavor in the boiling of vegetables in a traditional New England boiled dinner. It generally must be blanched or rendered before use.
